Wow, what a show! We rang in the New Year at Calico Jack’s and the energy was high! As families sat down for a five course dining experience, they listened to the smooth Caribbean sounds of the Jose Conde Band. The colorful 5 course tasting started with lobster bisque, followed by mixed greens. Then came a delicious serving of crab Risotto topped with Sautée Snapper. To cleanse the palate, Apple and Lime Sorbet was served. For the fourth course they wowed the crowd with a deconstructed Beef Wellington served with Mushroom Ragu and topped with seared Foi Gras; and we’re not done yet! The grand finale was a beautifully presented Grand Marnier Victoria Sponge Cake enwrapped in raspberry ganache and finished with a white chocolate and hazelnut dust!
After dessert, the kids made there way to the bonfire and roasted marshmallows while families danced into the night. Champagne was served just before midnight and a warm toast was made to our Ambergris Cay family for a happy and healthy 2009! “The evening went very well; walking out of the kitchen all you saw were smiling faces, laughter and everyone having a very enjoyable evening. We had a roaring bonfire down by the beach, where the kids could roast marshmallows and at midnight, to bring in 2009 we had a champagne toast, lots of hugs and pictures and many great memories. Everyone danced and smiled and brought in the New Year as one big family. It was great to see so many smiling faces, amazing families and wonderful memories happening on Ambergris Cay, we only wish that everyone could have been here!â€
